What You’ll Need:
A Sharp Kitchen Knife
Measuring Cups & Spoons
A Heavy-Bottomed Frying Pan
A Wooden Spoon
Ingredients:
6 Organic Zucchini, About 5 Inches Long (About 4 1/2 Cups Sliced)
2 Tsps Minced Garlic
3 Tsps Fresh Chopped Mint
2 Tblsps Crumbled Feta
1/2 Tsp Sea Salt
Fresh Ground Pepper to Personal Taste
How To Put It Together:
1) Place your heavy-bottomed pan on medium heat. You will know that your pan is ready when you place your hand about an inch above the pan surface and you can feel heat radiating from the pan. Now add your oil. Swirl the oil around in the pan.
2) Add your zucchini, shaking the pan a little to get them around the entirety of the pan. You will hear a sizzle – that’s what you want. Leave them for a minute or so to brown, then start moving them around the pan with your wooden spoon for another minute or so.
3) Add your minced garlic & mix it in. Now add your feta & give it one more stir. Turn the heat off & add your fresh chopped mint and toss it through.
4) Serve & Enjoy.

If you are cooking this dish on an electric stove, remove the pan from stove before adding your mint.
