    Greetings!

    Easter is April 1st – can you believe that it’s here already?! At this time of year, we can feel like the Easter bunny hopping from place-to-place planning, shopping and creating general madness for ourselves for the big spring holiday. And, of course, it falls early this year….

    So to help out, I’m sharing a delicious and easy-to-make menu that’s sure to wow your family and friends!

    As an appetizer, my Deviled Eggs with Smoked Salmon and Goat Cheese .

     

    Deviled Eggs with Salmon and Goat Cheese

     

    These yolk and mayonnaise-free little devils are light and lemony with the delicate flavor of smoked salmon to boot! You will be surprised how quickly they disappear from the plate!

     

    Pistachio Crusted Rack of Lamb with Heirloom Tomato Salsa

    As a main course, Pistachio Crusted Lamb with Heirloom Tomato Salsa an elegant, beautifully presented, protein powerhouse that’s perfect for any special occasion meal. It’s impressive looking and super easy-to-make! It will become your go-to dinner party dish.

     

    Roasted Zucchini with Rosemary & Garlic

     

    As a side, something easy, that says: ‘it’s springtime’. Roasted Zucchini with Rosemary & Garlic fits the bill. The zucchini are roasted so you can put them in while the lamb rests; easy and delicious.

    This menu tastes as amazing as it looks! Your family and friends will be totally wowed! And, you can do it, without missing a hop!
