    Easy, Yummy, One Pot Recipe for National Noodle Day!

    Happy Thursday!

     

    Did you know that October 5 is National Noodle Day? Well neither did I…. A friend told me about it. And just the thought inspired me to create a new recipe!

     

    Have you ever heard of zoodles? Have you fallen in love with them the way I have? Even the name is adorable! Zoodles are zucchini noodles and I’m having a blast experimenting with them!

     

    I started my zoodle love affair by buying spiralized veggies at my local supermarket. I finally broke down and bought my very own spiralizer; it’s much more economical!

     

    Well, now that I’ve been playing with my new toy, I just couldn’t wait to share my new ‘how to’ blog post: Thai Chicken Soup with Zoodles. It’s a fun, low calorie, absolutely yummy, one pot meal – ENJOY!

    National Cookie Day

    Speaking of national food days, October 1st was National Cookie Day. In case you missed our Facebook post on the 1st, I wanted to let you know that my fave grain-free, gluten-free cookie recipe is now on the site: Healthy Chocolate Chip Cookies! I’m giving you fair warning, though – they’re really addicting! 🙂

    Since we’re talking zucchini, here’s a quick and delicious zucchini side dish that’s perfect for those rushed, mid-week dinners: Roasted Zucchini with Rosemary & Garlic.

     

    Effective Fitness

    We all want our fitness routine to REALLY WORK! I want to share with you one of my most effective fitness tools, the Bottom Band. I have taken it with me on my last two trips since I have learned (the hard way) that hotel gyms really don’t have everything that a girl needs to get an effective workout. It is FANTASTIC!
