Garden Goodness Eggs

Serves 4

This egg dish is a hearty & healthy start to the day! This is a great way to get veggies into your family first thing in the morning! It’s super antioxidant offering over 200% of the RDA for vitamin C and over 100% of the RDA for vitamin A!
 

What You’ll Need:

A Large Skillet with a Cover

A Sharp Kitchen Knife

Measuring Cups & Spoons

A Wooden Spoon
 

Ingredients:

4 Cups Chopped Tomatoes

2  Bell Peppers of Different Colors, Sliced

1 Onion, Sliced

1 T. Minced Garlic

1 Tblsp Olive Oil or Grapeseed Oil

2 Tsp. Organic Cumin

1 Tsp. Smoked Paprika

1 Tsp. Sea Salt

2 Cups Frozen Green Peas

1/4 Cup Basil, Chopped

Shakes of Hot Sauce to Personal Taste

8 Organic Large Eggs

How To Put It Together:

1) Preheat the pan over medium high heat. You will know that the pan is ready when you place your hand about one inch above the pan’s surface and you feel heat radiating up from the pan. Now add your oil and swirl it around the pan.
 

2) To the pan, add the sliced onion and saute until just opaque. Now add the yellow pepper and stir it around the pan for about a minute. Add the chopped tomatoes, stirring well to mix the vegetable together. Add the cumin, smoked paprika, sea salt and hot sauce. Give the pan a stir and add the frozen peas, stir again.
 
3) Using the wooden spoon, make a small bowl-like indentation in the sauce and crack an egg into the space. Repeat the process with the rest of the eggs. Cover the pan and let the eggs cook until just firm, about 5 minutes.
 
4) Serve and enjoy!
