Greek Lamb Meatballs with Tzatziki Sauce

The Nina Cucina version of a Greek classic, the Greek Lamb Meatballs!
What You'll Need

- A Food Processor
- A Spatula
- A Mini Ice Cream Scoop
- A Small Casserole Dish or Plate
- 2 Small Bowls
- A Small Bowl filled with Water
- A Broiler Pan
- A Sharp Kitchen Knife
- A Box Grater
- A Sieve
- A Medium Size Mixing Bowl
- A Whisk
- A Large Serving Platter
- A Small Serving Bowl
Ingredients:
- 1 Pound Ground Lamb
- 1/2 Tsp Sea Salt
- 1 Tsp Organic Cumin
- 1/2 Tsp Cinnamon
- 1/8 Tsp Cayenne Pepper
- 1 Medium Onion, Roughly Chopped
- 1 Tsp Minced Garlic
- 1 Egg, Organic
- 1/4 Cup Golden Flaxseed Meal
- 1/2 Cup + 3 Tbsp Sesame Seeds
Tzatziki Sauce:
- 1/2 Cup Cucumber Shredded, Drained
- 2 Tsp Minced Garlic
- 2 Tsp Lemon Juice
- 1 Tbsp Olive Oil
- 2 Tbsp Mint, Fresh Chopped
- 1/2 Tsp Sea Salt
- Assorted Crudités
How To Put It Together
- Preheat the oven to 400 degrees Fahrenheit. Into the food processor, add the onion. Process to a fine mince. Add the ground lamb, sprinkle the spices and sea salt over the entirety of the meat; process until well combined.
- Crack the egg into a small bowl to check for freshness and add it to the food processor. Sprinkle the blended oatmeal on top and process until well combined.
- Pour the sesame seeds into a small casserole dish. Place a small bowl filled with water and a broiler pan nearby on the work surface. Using a mini ice cream scoop for portion control, scoop a spoonful of lamb into your hand, roll into a ball and place it in the sesame seed dish. Dip the scoop into the water bowl as needed to prevent the meat from sticking. Roll the meatball through the sesame seeds to completely cover each one; place on the broiler pan.
- Place the broiler pan in the center of the oven for 10 minutes. Set aside until cool enough to handle safely.
- For the Tzatziki Sauce: Grate the cucumber, place it in a sieve over a bowl to drain. In a small bowl, mix together the greek yogurt, garlic, lemon juice, mint and olive oil until well combined. Add the drained, grated cucumber and stir till combined. Transfer the Tzatziki to a small serving bowl and place it in the center of a large serving platter. Arrange the lamb meatballs and assorted crudités around the sauce in a decorative fashion.

To make blended oatmeal: add measured rolled oats to a food processor or blender and process until it’s the consistency of a gruff flour.
