    Happy National Pumpkin Day!

     

    October 26 is National Pumpkin Day!

     

    This beautiful, orange fruit is a member of the gourd family. Other members include: cantaloupe and honeydew melons, watermelons, cucumbers and zucchini.

     

    We really start thinking about pumpkin now because it goes hand-in-hand with Fall festivities like Halloween and Thanksgiving. But really, pumpkin can be eaten all year long; it’s so versatile and it’s very nutritious!

     

    One cup of cooked, mashed pumpkin has:

     

    • 49Itty-Bitty Calories
    • 2gr Protein
    • 12 gr Carbohydrate
    • 3gr Fiber
    • 2gr Sugar
    • 245%RDA Vitamin A (WOW!)
    • 19%RDA Vitamin C
    • 16%RDA of Potassium

     

    Plus, a nice blend of minerals, B vitamins and even some vitamin E – plus it’s yummy to boot.

     

    There’s more to this nutritious fruit than meet the eye so I wanted to share a few pumpkin recipes that ARE NOT Pumpkin Pie 🙂

     

    One of my all time faves is my Pumpkin Spice Bread! It’s delicious at breakfast, makes a great snack and is a unique and delightful addition to a cheese plate!

     

    I LOVE soup, especially during the Fall! My Provo Pumpkin Soup was born on the island of Providenciales, Turks & Caicos. It’s vegan and filled with spices that will warm your tummy and your soul!

     

    A great side dish that doubles as a vegan main course is Pumpkin Quinoa Pilaf. It’s super-satisfying! This recipe feeds a crowd so it’s perfect for a gathering of friends and family – think Thanksgiving! Everyone will love you for it!
