Apple-Sage Chicken Sausage
Makes 24 One Ounce Patties
Apple-Sage Chicken Sausage is a low-calorie, health flavorful sausage with only 37 calories per 1 ounce patty!
What You’ll Need:
A Food Processor
A Food Scale
A Kitchen Knife
A Large Bowl
A Medium Sized Bowl Filled 3/4 Filled With Cold Water
A Mini Ice Cream Scoop
Parchment Paper
Gallon-Size Freezer Bags
Ingredients:
1 1/2 lbs Organic Chicken Thighs
1 Tbsp Finely Chopped Fresh Sage (Or To Your Personal Taste)
1 1/2 Tsp Fennel Seed
1 1/2 Tsp Minced Garlic
1 Tsp Sea Salt
1 Tsp Smoked Paprika
1/4 Tsp White Pepper
1/4 Tsp Red Pepper Flakes
1/8 Tsp Nutmeg
1 Cup Finely Chopped Unpeeled Apple (About One Large Apple – Your Favorite Variety)
How to Put It Together:
1) Roughly chop the organic chicken thighs into about 1 inch by 1 inch cubes; add them to the food processor. Add all of the spices: the sage, fennel seed, minced garlic, sea salt, smoked paprika, white pepper, red pepper flakes and nutmeg.
Finally, add the chopped apple. Using the pulse button, mix the apple into the mixture, scraping the sides of the bowl as you go; transfer the sausage to a mixing bowl.
2) Pull out a piece parchment that’s about 10 inches long. Parchment typically comes in a 15 inch width. Fold your parchment piece in half and unfold it again laying it flat on your work surface. This will give you a guidance line in the center of your piece of parchment – that’s where you will fold it later to put it and your sausage patties into your freezer bag.
3) Using a mini ice cream scoop, portion out a generous scoop of sausage meat and place it on your kitchen scale to measure; it should weigh about one ounce. Do this with at least the first patty so you can get an idea of the volume that each patty should be, after that you should be fine.
4) Using a medium sized bowl filled with water, dampen your hands slightly and form a patty of the sausage. Place your sausage patty on the right side of your parchment paper. You should be able to fit approximately 9 small patties onto your parchment.
Fold the left side over the right, using your fold line as a guide. Slide your parchment packet into the freezer bag. This recipe makes about 24 one ounce patties so you should have 3 of the parchment packets in your freezer bag. Now you have sausage (portioned) whenever you need it! Seal the freezer bag, trying to release as much of the air in the bag as possible. Place freezer bag on a flat surface in your freezer.
