Baby Kale Salad with Walnuts & Apple Vinaigrette

8 Salad Plates

 

Ingredients:

5 Ounces Baby Kale

2 Heads ‘Baby Gem’ Lettuce

1 Cup Carrot, Grated

1 Cup Jicama, Julienne

1 Cup Walnuts, Chopped

1 Granny Smith Apple, Julienne

5 Ounces Pomegranate Seeds (Garnish)

1/4 Cup Apple Balsamic

1/3 Cup Blood Orange Olive Oil

1 Tsp Ground Ginger

1/2 Tsp Sea Salt

1/2 Tsp White Pepper

 

How To Put It Together:

1) To the salad bowl, add the kale, baby gem lettuce, grated carrot, jicama, walnuts and apple; toss lightly and set aside.

 

2) In a small mixing bowl, whisk together the apple balsamic, orange infused olive oil, ground ginger, sea salt and white pepper. Pour the dressing over the entirety of the salad; toss thoroughly. Divide the salad among 8 salad plates; garnish each plate with pomegranate seeds.

 

3) Serve and enjoy!

 

Nina’s Tasty Tip:

If you would like to prepare this salad before a dinner party, add all of the ingredients to the bowl, except the apple. Julienne the apple and place in a bowl filled with lemon water. Store in the fridge till ready to serve. Dry the apple on paper towels before adding it to the salad.
