    Cabo Chicken Skewers

    Cabo Chicken Skewers

    Serves 6

     

    What You’ll Need:

    Bamboo Skewers, Soaked

    Measuring Cups and Spoons

    A Sharp Kitchen Knife

    A Large Mixing Bowl

    A Whisk

    A Gallon Zip-Top Bag

    A Broiler Pan

    2 Large Plates

    A Grill (if grilling outside)

    A Vegetable Grilling Grate (if grilling outside)

    A Serving Platter

     

    Ingredients:

    2 Tsp Organic Cumin

    2 Tsp Coriander

    1 Tbsp Grated Ginger

    2 Tsp Garlic, Minced

    1 Tsp Organic Chipotle

    1 Tsp Smoked Paprika

    1 Tsp Sea Salt

    1 Cup Non-Fat Yogurt

    2/3 Cup Lime Juice

    1/4 Cup OJ Concentrate

    2 LB Organic Skinless, Boneless Chicken Thighs, Trimmed & Cubed

    1 1/2 LB Chayote Squash, Thickly Sliced

    2 Red or Orange Peppers, Cut into Chunks

    A Grapefruit, Cut in Half (for presentation)

     

    How To Put It Together:

    1) Into a large mixing bowl, whisk together the lime juice, OJ concentrate, non-fat yogurt and spices; set aside. Open a zip-top bag and fold over the top; add the chicken thighs to the bag. Pour the marinade over the chicken; seal the bag, squeezing out all of the air. Place the chicken into the fridge for about 4 hours or overnight (if possible) to marinate.
     
    2) Remove the chicken from the fridge and preheat the oven to 350 degrees Fahrenheit. Assemble the skewers: place a slice of pepper onto the skewer, followed a piece of the marinated chicken followed by a chunk of the chayote squash. Place the skewers on a broiler pan as you go or on a large plate if you intend to grill them. For the oven method: Place the skewers in the oven for 10 -12 minutes or until the chicken is cooked through. For the grill method: Place a vegetable grilling grate on the grill preheat the gas grill to medium-high heat. Place the skewers on the vegetable grate; the grate ensures that the veggies don’t get stuck in between the grate of the grill, as well as even cooking. Grill the skewers for about 5 – 7 minutes each side or until the chicken is cooked through. Transfer the skewers to a large plate.
     
    3) To serve: Slice a grapefruit in half, reserving one half for another use. Place the other half on a serving platter; prick the skewers into the grapefruit, evenly spacing them to a statuesque display.
     
    4) Serve and enjoy!

     

    Nina’s Tasty Tip:

    You may choose to freeze the chicken in the marinade to keep this delicious dish at the ready for surprise guests. It freezes well and will keep for about 3 months in the freezer.
