    Coffee-Cocoa Spiced Leg of Lamb with Cherry Sauce

    Serves 10 – 12


    What You’ll Need:

    A Grill or Grill Pan

    A Spatula or Tongs

    A Kitchen Spoon

    Measuring Cups and Spoons

    A Sharp Kitchen Knife

    A Small Bowl

    A Kitchen Platter

    A Mallet

    Plastic Wrap


    A Blender

    Tin Foil

    A 4-Quart Pot



    A 3.54 LB Leg of Lamb (Grass-Fed)

    3 Tbsp Olive Oil

    Spice Mix:

    1 Tbsp + 1 Tsp Finely Ground Organic Coffee

    1 Tbsp + 1 Tsp Raw Cocoa

    2 Tsp Smoked Sea Salt

    1/2 Tsp Ground Organic Cumin

    1/4 Tsp Mustard Powder

    1/4 Tsp Organic Chipotle

    1/4 Tsp Smoked Paprika

    Cherry Sauce:

    1 1/2 Cups Frozen Cherries, Split

    1/2 Cup Port Wine

    1/2 Tsp Dried Mustard Powder

    1 1/2 Tbsp Black Cherry Balsamic

    1 Tsp Arrowroot

    Fresh Ground Sea Salt & Black Pepper to Taste


    How To Put It Together:

    1) Remove the lamb from the fridge and bring it to room temperature (still cool to the touch). Butterfly the lamb, making the thickness as even as possible. Cover the lamb with plastic wrap and pound with a mallet to achieve even thickness. Set aside for now.

    2) In a small bowl, whisk together the spices. Rub the spice mixture onto the lamb, covering it completely.

    3) Preheat the grill or grill pan to medium high heat; add the lamb. Grill for 10 – 12 minutes each side. Transfer the lamb to a plate, cover it with foil and allow it to rest for at least 10 minutes

    4) For the Cherry Sauce: To the blender, add 1/2 the cherries, the port wine, mustard powder, black cherry balsamic, arrow root, sea salt and pepper; blend until emulsified. Pour the sauce into a pot and place it over medium-high heat stirring on occasion until it has thickened. Add the reserved cherries, stir until the cherries are warmed through.

    5) To plate the dish: Slice lamb against the grain into thin slices; place on a dinner plate. Spoon cherry sauce on top.

    6) Serve and enjoy!


    Nina’s Tasty Tip:

    This sauce is wonderful on pork, duck, chicken and turkey as well.
