    Garlic Roasted Asparagus

    Serves 4

     

    My Garlic Roasted Asparagus is my ‘go to’ mid-week side dish! It’s fast, easy, delicious and nutritious! This side dish is great with any of the following dishes: Artichoke-Stuffed Chicken with White Wine Sauce, Pan Seared Duck Breast with Black Cherry Vinaigrette & Raspberries, Rum Marinated Halibut with Rainbow Relish & Orange Vinaigrette or White Salmon Saltimbocca.

     

    What You’ll Need:

    A Baking Sheet
    Parchment Paper
    Measuring Cups & Spoons

     

    Ingredients:

    1 1/2 Pounds Asparagus
    1 Tbsp + 1 Tsp Minced Garlic
    2 Tsp of Avocado Oil or Grapeseed Oil
    1/4 Tsp Sea Salt
    Fresh Ground Pepper

     

    How To Put It Together:

    1) Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper; this one step makes clean up a breeze!

    2) Asparagus spears have a natural breaking point where the tough part of the stalk begins. To prep the asparagus, hold a spear at about the middle point and gently bend the end of the stalk; the tough part of the stalk will break off. Place the asparagus spears one-by-one on the baking sheet.

    3) Sprinkle the minced garlic on top of the asparagus and drizzle the oil on top of that. Using clean hands, toss the asparagus, covering each one with garlic and oil. Arrange the asparagus in one layer, giving each stalk a little room to ensure even roasting. Sprinkle with sea salt and several grindings of fresh ground pepper. Place the baking sheet in the center of the oven for ten minutes or until the asparagus are bright green in color. Transfer the baking pan to your work surface; divide the asparagus between four plates.

    4) Serve and enjoy!

     

    Nina’s Tasty Tip:

    If you asparagus is particularly thin adjust the roasting time. Just watch for that bright green color which means they are done.
