    Healthy Chocolate Chip Cookies

    Makes About 38 Cookies

    Chocolate Chip Cookies are my absolute FAVORITE so I was driven to create a grain-free version!
     

    What You’ll Need:

    A Standing Mixer
    Measuring Cups & Spoons
    A Baking Sheet Lined with Parchment
    A Mini Ice Cream Scoop
    A Small Bowl
    A Small Bowl filled with Water
    A Spatula
    A Cooling Rack
     

    Ingredients:

    3 Cups Almond Flour
    1 Tsp Vanilla Powder
    2 Tsp Baking Soda
    1/4 Tsp Sea Salt
    2 Cups Bittersweet Chocolate Chips, Organic
    1/2 Cup Honey
    1/4 Cup Extra Olive Oil
    2 Large Egg Yolks, Organic

     

    How To Put It Together:

    1. Preheat oven to 325 degrees Fahrenheit.
     
    2. To a standing mixer, add the almond flour, vanilla powder, baking soda and sea salt; blend until combined. In a small bowl, whisk together the eggs, honey and olive oil; pour the mixture into the mixer; beat until the batter forms a ball. Remove the bowl from the standing mixer and place the baking sheet and water bowl nearby. Using a mini ice cream scoop, portion as many cookies as will fit on a cookie sheet, dipping the ice cream scoop in water as needed to keep the process moving smoothly.
     
    3. Place the baking sheet in the center of the oven for 8 – 10 minutes. Transfer the cookies to a cooling rack until cool.
     
    4. Serve and enjoy!

     

    Nina’s Tasty Tip:

    Vanilla extract can be substituted for the vanilla powder, just double the amount.
