Healthy Chocolate Mousse

Serves 6

 
My Healthy Chocolate Mousse is high fiber touting 12 grams per yummy serving – that’s almost half of your RDA for the day! This is a low calorie dessert to boot coming in under the 300 calories per chocolatey serving. And for a dessert it’s high protein to boot offering 8 grams of protein!

 

What You’ll Need:

A Food Processor

2 Large Mixing Bowls

A Hand Mixer

Measuring Cups & Spoons

An Ice Cream Scoop

6 Martini Glasses

 

Ingredients:

2 Cups Avocado Puree (that’s about 4 -5 Haas Avocados)

3/4 Cup Maple Syrup

3/4 Cup Organic Raw Cocoa

1 Tablespoon Almond Extract

2 Tablespoons Cointreau or 1 Tablespoon Orange Extract (kid friendly)

1 Teaspoon Balsamic Vinegar

1/2 Teaspoon Sea Salt

1/4 Cup Egg White Powder

1/2 Cup Water

1 Pint Fresh Raspberries

Mint Sprigs as Decoration

 

How To Put It Together:

1- Cut open the avocados remove the seed and scoop the flesh into the food processor. Process until smooth. Remove the puree to a measuring cup & measure 2 Reserve any excess puree for another use.
 
2- Add the maple syrup, process until mixed in, the add the cocoa a little at a time until it’s mixed in. Add the almond extract, cointreau (or orange extract if you are feeding it to the kids), balsamic & salt and process until thoroughly mixed. Remove the mousse mixture to a large bowl.
 
3- In a large mixing bowl, whisk together the egg white powder and water.  Beat the egg whites at high speed until they form soft peaks.  Fold about a third of the whites into the mousse mixture to lighten it. Then fold the rest of the egg whites into the mousse using large strokes. The idea is to lose as little of the air in the whites as possible so that your mousse will be luscious & light.
 
4- Refrigerate for at least one hour or until completely cool, which will be difficult because you will want to eat the whole thing right out of the bowl — it’s SO yummy.
 
5- Once the mousse is chilled, distribute it evenly between six martini glasses – I like using an ice cream scoop for this. Decorate with raspberries & mint leaves. Serve & enjoy!
