Lemon Basil Scented Strawberry Gazpacho

Lemon Basil Scented Strawberry Gazpacho is a light raw gazpacho perfect as an appetizer, palate cleanser or a dessert!

 

Ingredients:

About 16 Strawberries

1 1/2 Cups Unsweetened Green Tea or Water

Juice of 1 Lemon

1/4 Cup Fresh Chopped Basil (About a handful)

Stevia to Personal Taste

 

What You’ll Need:

A Blender

A Sharp Kitchen Knife

A Citrus Squeezer

Measuring Cups & Spoons

Soup Bowls

 

How To Put It Together:

 

1) Remove the green leafy tops of the strawberries, cut them in half and put them in the blender. Roughly chop the basil and add it to the blender. Pour in the green tea or water, squeeze the lemon into the blender an add two scoops of stevia or to personal taste. Blend until smooth. If the soup is a little too thick, thin it out with an additional tablespoon or two of water or green tea. You may choose to cool the gazpacho at this point or you may serve it room temperature.

 

2) Serve and enjoy!
