Marinated Black Bean Salad

What You’ll Need:

2 (15-Ounce) Cans Black Beans, Drained

3 Roma Tomatoes, Diced

1 Red Onion, Thinly Sliced

1 Medium Red Pepper, Sliced

1 Medium Yellow Pepper, Sliced

1 (8 Inch) English Cucumber, Cubed

1/4 Cup Fresh Cilantro, Chopped



2 Tbsp Lime Juice

2 Tbsp OJ Concentrate

2 Tbsp Dijon

2 Tsp Organic Cumin

1 Tsp Organic Chipotle

1/2 Tsp Sea Salt

1 Tsp Garlic, Minced

1/4 Cup + 2 Tbsp Extra Virgin Olive Oil


How To Put It Together:

1) Into a large salad bowl, add the drained black beans, Roma tomatoes, red onion, red and yellow pepper, English cucumber; toss lightly and set aside for now.


2) To a blender or nutri-bullet, add all the dressing ingredients; blend until emulsified. Pour the dressing over the black bean salad, sprinkle the fresh cilantro over the entirety of the bowl and toss until combined.


3) Serve and enjoy!
