Mixed Berry Salad with Lime & Mint
Serves 4
I serve this delicious salad both as a part of a nutritious breakfast as well as a light and healthy dessert.
What You’ll Need:
A Large Bowl
A Sharp Kitchen Knife
Measuring Spoons
2 Serving Spoons or Salad Spoons
A Citrus Press
Ingredients:
1 lb Strawberries, thoroughly washed
About 12 oz Blueberries, thoroughly washed
About 12 oz Blackberries, thoroughly washed
2 Tbsp Lime Juice (1 – 2 Limes)
2 – 3 Scoops Stevia (or to personal taste)
3 Tbsp Fresh Chopped Mint
How To Put It Together:
1) Cut the tops off the strawberries. Over the quarter them dropping them into the bowl as you go. Add the blueberries and the blackberries to the bowl and lightly toss the fruit lightly. Squeeze the lime(s) into the bowl; I find using a citrus press the easiest and most efficient way to do this. Sprinkle the stevia on the salad, moving around the bowl. Sprinkle the chopped mint into the bowl and lightly toss the salad once more.
2) Serve and enjoy!
Nina’s Tasty Tip:
This salad is wonderful with yogurt as a parfait for breakfast or dessert. Flavor the yogurt with orange or orange extract and stevia. In alternating layers, layer the yogurt and and berries, finishing with the berries – YUM!
