Pineapple Vinaigrette is an island-inspired make-ahead dressing that’s fast, easy and delicious! Can be served cold on salads or hot on fish or chicken.


What You’ll  Need:

A Blender

Measuring Cups & Spoons



½ Cup Frozen Pineapple Juice Concentrate (Thawed)

3 Tablespoons Dijon

½ Cup Extra Virgin Olive Oil

½ Cup Vegetable Broth

Sea Salt and Fresh Ground Pepper to Personal Taste


How to Put It Together:

1) In a blender, add the frozen pineapple juice, Dijon, extra virgin olive oil, vegetable broth, sea salt and pepper: blend until emulsified.


2) Serve & enjoy!

This vinaigrette can be served hot or cold – it is delicious either way.

This dressing is really yummy on spinach salad, cold. Serve it warm over fish or use it as a glaze for chicken on the grill.
