Pineapple Vinaigrette is an island-inspired make-ahead dressing that’s fast, easy and delicious! Can be served cold on salads or hot on fish or chicken.

Ingredients:
½ Cup Frozen Pineapple Juice Concentrate (Thawed)
3 Tablespoons Dijon
½ Cup Extra Virgin Olive Oil
½ Cup Vegetable Broth
Sea Salt and Fresh Ground Pepper to Personal Taste
How to Put It Together:
1) In a blender, add the frozen pineapple juice, Dijon, extra virgin olive oil, vegetable broth, sea salt and pepper: blend until emulsified.
2) Serve & enjoy!
