Sesame Broccoli Salad

Ingredients:
1 ½ Pounds Broccoli
2 Teaspoons Sea Salt
1 Red Pepper, Sliced
1 Cup Carrot, Grated
1 Cup Water Chestnuts, Sliced
1 Tablespoon Sesame Seeds
Dressing Ingredients: (makes about 3/4 cup)
2 Tbsp Honey Ginger Balsamic
1 Tbsp Well-Stirred Tahini (Sesame Seed Butter)
½ Cup Sesame Oil
2 Tbsp Vegetable Broth
1 Tsp Garlic, Minced
1 Tsp Sea Salt
Fresh grated ginger root (about an inch or to personal taste)
Shakes of Hot Sauce
How to Put it Together:
1) Bring a large pot of water to a boil; add 2 teaspoons sea salt. Boil broccoli for about 3 minutes until tender crisp. Transfer the pot from the stove to the sink; add cold cold water to the pot to stop the cooking. Strain the broccoli and give it one more cold water rinse. Pour the broccoli into a large salad bowl; place it in the fridge to cool.
2) Into the blender, add the tahini, garlic, sea salt, rice vinegar, sesame oil, hot sauce and vegetable broth. Grate the fresh ginger root right into the blender; blend all the ingredients together until emulsified.
3) Remove broccoli from the fridge, add it to the bowl. Add sliced red pepper, grated carrots, sliced water chestnuts and sesame seeds to the bowl; pour the dressing over the entirety of the bowl and toss well.
4) Serve and enjoy!

Keep your ginger root in the freezer. It lasts for months with great flavor and is a lot easier to grate!
