    Spicy Spinach with Red Peppers

    Serves 6

     
    My Spicy Spinach with Red Pepper recipe is an easy-to-make and delicious side dish. It has just a little kick and surprisingly subtle undertone of garlic. This dish presents beautifully because of the gorgeous color combination making it perfect for your next dinner party. Plus, you make it in the oven, so it frees up space on your stove top when you are cooking for a crowd. Spinach & red peppers are both highly antioxidant offering you lots of essential vitamin A, over 100% of your RDA for the day!

     

     What You’ll Need:

    A Wok

    Salad spoons or wooden spoons

    Measuring spoons

    Small bowl

    Whisk

     

    Ingredients:

    1 lb Organic Baby Spinach

    3 Tblps Grapeseed Oil or Avocado Oil

    2 Tsps Minced Garlic

    1/2 Tsp Chipotle Pepper

    1 Tsp Sea Salt

    1 Red Pepper, Sliced

     

    How To Put It Together:

    1) Preheat a wok over medium-high heat. You will know that the wok is ready when you place your hand about one inch from the pan surface and you feel heat radiating up from the pan. Add the oil; swirl it around the pan. Fill the wok about three quarters full with spinach; toss until wilted. Add more spinach, toss again; continue until all the spinach is in the wok. Add the red pepper slices, toss for about a minute. Add the sea salt, garlic and chipotle and give the veggies one last toss.
     
    2) Serve and enjoy!

    1) Feel free to add fresh herbs of your choice to this dish for another healthy alternative, sliced green onions are also a tasty addition.
