Stir-Fried Asparagus Medley

Serves 4

 

My Stir-Fried Asparagus with Pepper Medley & Basil is a colorful and delicious anti-oxidant powerhouse! It’s fast and easy making it a perfect middle of the week dish.

 

What You’ll Need:

A Wok

A Sharp Kitchen Knife

Small Bowls for Prep

2 Wooden Spoon

 

Ingredients:

1 Pound Asparagus

1 Large Red Pepper, Thinly Sliced

1 Yellow Pepper, Thinly Sliced

1 Medium Red Onion, Thinly Sliced

1 Tsps Minced Garlic

2 Tblps Chopped Basil

2 Tsps Grapeseed Oil

1/2 Tsp Sea Salt

Fresh Ground Pepper to Taste

 

How To Put It Together:

1) Trim the asparagus and slice the on the diagonal into 3 inch pieces (approximately). Peel and slice the onion and place it in a prep bowl. Chop the basil and place it in a prep bowl as well. Core the peppers and slice them thinly and put them in a prep bowl.

 

2) Place all the bowls of veggies near the stove. Preheat the wok over high heat. You will know that the wok is ready when you place your hand about one inch above the pan’s surface and you feel heat radiating from the pan. Now add the oil and swirl it around the pan. Add the asparagus to the wok and toss for about 3 minutes. Add the onion and bell peppers and toss for 2 minutes more. Add the sea salt, fresh ground pepper and fresh chopped basil and toss one more time. Remove the wok from the heat.

 

3) Serve and enjoy!

 

Nina’s Tasty Tip:

I chop about 4 heads of garlic in my food processor once a week. Just add a little grapeseed oil to the garlic it will coat & preserve the garlic. Store in an airtight container in the fridge. A great time saver for mid-week meal preparation!
