Winter Salad
Serves 6
Winter Salad is filled with taste-bud awakening greens plus the crunch of walnuts and a hint of creamy goat cheese.
What You’ll Need:
A Sharp Knife
A Blender
Measuring Cups & Spoons
A Large Salad Bowl
Salad Spoons
Ingredients:
Dressing:
1/4 Cup Dried Figs, Sliced
1/4 Cup Black Cherry Balsamic
1/4 Cup Dijon Mustard
1/4 Cup + 2 Tbsp Olive Oil
1/4 Cup + 2 Tbsp Vegetable Broth
Salad:
3 Ounces Organic Baby Spinach, Washed
1 Bunch Organic Watercress, Washed
1 Cups Radicchio, Sliced
2 Pears, Cored & Chopped
2/3 Cup Walnuts, Chopped
3 Ounce Feta, Crumbled
How To Put It Together:
1) Into the blender, add all of the dressing ingredients and blend until emulsified.
2) To the salad bowl, add the spinach, watercress, radicchio, chopped pears and walnuts; toss lightly. Pour the dressing over the entirety of the bowl; toss until well combined. Sprinkle the feta across the top of the salad and toss once more.
3) Serve and enjoy!

Pecans and blue cheese are nice alternatives for a new twist to this salad.
